It’s nearly Christmas and time for a few treats. Why not make them a healthy option with these amazing Coffee and Chocolate Truffles.

This recipe makes roughly 40 truffles, takes just 15 minutes to make with a recommended chilling time of 1 hour, if you can wait that long.
1 Cup Cashew Nuts
3 Tbsp Melted Coconut Oil
1/4 Cup Raw Cacao
1/3 Cup Raw Cacao Nibs
1 Tbsp Strong Liquid Coffee (Dissolve 1 Tsp of instant coffee in 1 Tbsp of boiling water)
1 Tsp Vanilla Extract
1/2 Tsp Maca Powder
1 Tbsp Chia Seeds
1/4 Cup of Maple Syrup
Raw Cacao Powder and Desiccated Coconut
Add all the ingredients into a food processor and blend until fairly smooth and it starts to bind together. About 5 minutes.
Dampen your hands and form mixture into balls or press into a silicon mould.
Decorate by rolling the balls in cacao powder or desIccated coconut.
Place in fridge for 1 hour.
